Here is one of my favorite salad recipes for the summer, the fresh mint gives it that special kick.
Full head of butter lettuce
A handful of cherry tomatoes
Several mint leaves
Micro-greens (of your choice)
Optional: smoked salmon
Juice of 2 to 3 large lemons
1 teaspoon sea salt
Copy the lettuce and avocado and mix in with other salad ingredients.
Mix together the lemon juice, olive oil (similar quantity or a bit less than the lemon juice), salt, and a sprinkle of white pepper.
You can add smoked salmon to your salad for extra protein.
